Matcha has conquered the global culinary landscape, appearing in everything from iced lattes to artisanal pastries. However, the vibrant green tea powder faces an existential threat at its source: climate change is jeopardizing Japan’s iconic matcha crop, altering both its yields and its delicate flavor profile. In response, Japanese researchers and tea growers are turning to cutting-edge genomic selection to safeguard the future of the beverage.

Matcha is produced by grinding tencha, a specialized green tea leaf cultivated under shade during the Japanese spring from March to May. Traditionally, mild daytime temperatures of 20 to 25 degrees Celsius combined with cool nights allow the plants to synthesize amino acids responsible for matcha's distinct umami flavor. Yet over the past century, spring temperatures in key production regions like Kyoto-Uji have risen by roughly 0.6 to 1 degree Celsius. Warmer nights and erratic weather stress the tea bushes, causing them to produce higher levels of catechins—defensive compounds that impart a bitter taste.

Developing climate-resilient tea plants through traditional breeding methods is a notoriously sluggish process. Breeders cross-pollinate parent plants with desirable traits, cultivate thousands of seedlings, and historically have had to wait up to 15 years for plants to mature before evaluating their qualities. In Japan, where official cultivar registration requires the assessment of 41 distinct characteristics, releasing a new variety can take around 25 years.

To overcome these delays, scientists at institutions such as Shizuoka University and the NARO Institute of Vegetable and Tea Science are integrating genomic selection into breeding programs. By identifying genetic markers associated with heat tolerance in young seedlings, researchers can screen out unpromising candidates early, drastically streamlining multi-location field trials.

While genomic tools offer significant acceleration, experts emphasize that DNA analysis will supplement rather than completely replace field evaluations. Furthermore, researchers are monitoring whether selecting for heat resistance might inadvertently alter matcha’s signature flavor. So far, genetic evidence suggests there is no inherent biological trade-off between heat tolerance and rich umami taste, giving growers hope that science can preserve both the supply and flavor of Japan's celebrated tea.
